Mango Sago Pudding
Say hello to your new go-to summer dessert. This Mango Sago Ice Cream Pudding is a creamy, fruity fusion of tropical inspiration and Ben & Jerry’s touch. With chewy sago pearls, juicy mango, and a scoop of Sweet Mango Memories, it’s a refreshingly simple dessert that tastes like a tropical holiday in a bowl.
INGREDIENTS:
- 500g uncooked sago
- 3 ripe mangoes
- 100ml coconut milk
- 1 pint Ben & Jerry’s Sweet Mango Memories

Cook the sago according to the packet instructions. Once translucent, rinse in cold water and drain well.

Peel and chop two of the mangoes, then blend them with the coconut milk until smooth.

Dice the third mango into small cubes and set aside.

In a large bowl, mix the cooked sago with the mango purée, chopped mango, and the softened Sweet Mango Memories ice cream.
