INGREDIENTS:

  • 500g uncooked sago
  • 3 ripe mangoes
  • 100ml coconut milk
  • 1 pint Ben & Jerry’s Sweet Mango Memories
DIRECTIONS:

    Cook the sago according to the packet instructions. Once translucent, rinse in cold water and drain well.

    Peel and chop two of the mangoes, then blend them with the coconut milk until smooth.

    Dice the third mango into small cubes and set aside.

    In a large bowl, mix the cooked sago with the mango purée, chopped mango, and the softened Sweet Mango Memories ice cream.

    Serve immediately for a soft, creamy texture - or chill for a firmer pudding. Either way, it’s mango magic in every bite!
