Arancini, But Make It Ice Cream

Crispy on the outside, creamy on the inside—these ice cream arancini are the ultimate surprise for your spoon. Who said savoury gets all the fun?

INGREDIENTS:

  • 1 tub of Ben & Jerrys Chocolatey Orange Chunk Ice Cream
  • 150g marshmallows
  • 4 tbsp butter
  • 200g rice crispies
  • 50g plain flour, in a bowl
  • 3 eggs, beaten, in a bowl
  • 50g panko breadcrumbs, in a bowl
  • 1 litre sunflower oil
  • Grated white chocolate
  • Orange zest
DIRECTIONS:
  1. Step 1

    Use an ice cream scoop to scoop spherical balls of the ice cream - 6 if you can. Place on a cold place in the fridge while you crack on with the next steps.

  2. Step 2

    Place the marshmallows and butter in a bowl and microwave until the marshmallows have melted, roughly 3 minutes. Stir through the rice crispies until the mixture is completely combined.

  3. Step 3

    Allow the mix to cool as much as you can before it becomes too stiff to work with, then work it around each scoop of ice cream to seal it in. Place them back in the freezer and allow to freeze again - at least 2 hours.

  4. Step 4

    When you're ready, dip them into the plain flour, egg and panko in order, shaking them as you go. Go back to the egg and finally into the breadcrumbs one more time.

  5. Step 5

    Preheat the oil to 180°C and very quickly (max 30 seconds) fry the ""arancini"" until golden brown. Remove them and cover with the grated chocolate and orange zest, then serve immediately.
